Now, this mix is complete, it’s all
ready to go.
your meat and put the rub on heavy. Cover your baking dish with foil. Put it in a real slow oven. When the meat is tender, as tender, can be, it’s done. Makes it's own sauce and is lip smakin' good with sweet potatoes, beans & greens, or any other sides you like as long as you server corn bread too. Slow cooking makes it right! Your oven should be set form 200F to 325F at the very most. The lower the better and the longer it will take. The country ribs will take about 8 hours at 200F this makes it perfect to put in the oven in the AM and have 'em ready when you come home from work. Larger cuts like pork shoulder - makes great pulled pork if you have a 10lb Boston butt for example best bet is to put it in the oven at 200F when you go to bed, get up go to work, and when you come home it should be falling of the bone tender. Other cuts like baby-back, or St. Louis ribs can be cooked this way too - When I do these cuts I like to put a little broil on both sides to brown em' up before I cover and slow bake at 225F covered. Takes about 2-3 hours at that temp.
